Pat's Chicken Stack

With getting bored with the same old chicken recipes, I came up with this one and oh my gosh,
it was delicious, even though I say so myself!! 


  • 2 chicken breasts butterflied and flatten till quite thin.
  • 2 onions sliced
  • 1 punnet mushrooms sliced
  • 4 potatoes sliced VERY thinly


  • 1 cup grated cheddar cheese
  • 1 chopped fresh tomato
  • 1 chopped green pepper
  • 1 egg
  • 2 to 3 dessertspoons Mayonnaise
  • Salt
  • Ground pepper
  • Any spices you like. I added cayenne pepper, origanum and paprika.
  • Olive oil


  • Slice chicken pieces in smallish pieces and place in a bowl.
  • Add Soya sauce, a drizzle olive oil, salt, pepper and spices.
  • Mix well.
  • In a large casserole dish, layer the sliced onions, potatoes, chicken then the sliced mushrooms and bake covered for 40 minutes on 180C.
  • Mix the topping together well and gently spread the mixture over the chicken dish (after 40 minutes).
  • Bake uncovered for another 20 minutes until Golden Brown.

Quick and easy and ever so yummy and we still have leftovers for tonight!!
