Nicola's Budget Mexican Style Meal

An amazing, tasty Mexican style dish.
So easy and so delicious and makes a huge amount so well worth making – budget wise!!

Ingredients:

  • 500G mince
  • 2Tbl Oil
  • Onion, Garlic
  • Bacon ( cut in half pieces)
  • 1.5 cup rice
  • 1 Cup water
  • Green, Yellow, Red peppers
  • Chilli Powder or Flakes & a tsp curry powder
  • Chicken stock cube
  • Tomato and Onion mix
  • 2 tsp Tomato Paste
  • Lentils (brown) and I used about a handful.
  • Raisins.

Method:

Heat a tablespoon oil and add raw rice and fry till golden and set aside.
Sauté onions, garlic, peppers and mince in a little oil in another pot and stir for 10 mins.
Add the tomato and onion mix, tomato paste, lentils, chilli and curry and stir into the mince mixture. Add the water and simmer for approx. 6 minutes.
Add rice and raisins, mix well and place in a casserole dish, cover with bacon.
Bake covered at 325F or 180C for ¾ hour and serve with a salad or garlic bread.
