Melanie's Chicken Curry

A great chicken curry for those cold winter evenings! 

Ingredients:

  • 1 whole chicken cut up washed and drained
  • (1 1/2kg)
  • 1 1/2 tsp crushed ginger
  • & garlic
  • 1 large onion sliced
  • 2 sprigs of curry leaves
  • 1 stick cinnamon
  • 1 star anise
  • 3 pods cardamom
  • 1 tsp fennel
  • 1 can crushed tomatoes or 2 grated tomatoes
  • 2 potatoes peeled and quartered
  • 1 cup frozen peas or
  • Double beans
  • Oil
  • 1 Tblsp crushed green chilies
  • 1/4 tsp tumeric
  • 1 heaped Tblsp curry powder
  • 1 tsp garam masala
  • Salt to taste (11/2 tsp)
  • Chopped coriander

Method:

Place 2-3 Tblsp oil in a thick based pot
Add onions, curry leaves, chillies, fennel,
star anise, cinnamon & cardamom.
When brown add tumeric, masala, ginger & garlic – mix
Add chicken, tomatoes, potatoes salt & garam masala. Mix
Cover & cook on high for 5 mins
Reduce temp to med and cook for 30 mins
add peas to chicken
Should be cooked in another 15 – 20 mins
Garnish with coriander
Serve with a salad, rice, bread or roti.

TIP
 
Don’t add water to curry.
