Lyn's Breakfast Burrito
A delicious and healthy way to start the day!
- 1/2 Red Pepper
- 2 cups Baby Spinach
- 1 tsp Olive Oil
- 2 Eggs (whisked)
- 3 slices of Ham
- 1 Wrap of choice
- Chilli sauce of choice (optional)
- Fry red pepper & wilt baby spinach in olive oil over a medium heat and set aside.
- Lightly brush pan with a little extra oil & add whisked egg to make the “omelette”.
- Once the bottom is cooked flip over, immediately place the wrap on top and flip over again so the wrap is on the pan base.
- Place ham and veggies down the centre, season with salt & pepper to taste, roll and slide out onto your plate.
