Lyn's Breakfast Burrito

A delicious and healthy way to start the day!


  • 1/2 Red Pepper
  • 2 cups Baby Spinach
  • 1 tsp Olive Oil
  • 2 Eggs (whisked)
  • 3 slices of Ham
  • 1 Wrap of choice
  • Chilli sauce of choice (optional)


  • Fry red pepper & wilt baby spinach in olive oil over a medium heat and set aside.
  • Lightly brush pan with a little extra oil & add whisked egg to make the “omelette”.
  • Once the bottom is cooked flip over, immediately place the wrap on top and flip over again so the wrap is on the pan base.
  • Place ham and veggies down the centre, season with salt & pepper to taste, roll and slide out onto your plate.
