Country Captain Chicken A tasty warming dish, particularly suited to those grey rainy days! Ingredients: Chicken breasts 1 tin tomato paste (small)¾ cup of flour 3-4 cups water2 tsp salt 1 tsp sugarPepper 1 tsp curry powder1 – 2 onions – chopped Mixed herbsGarlic Method: Put seasoned flour into a plastic bag and toss chicken until coated well.Brown chicken in Holsum or butter.Place chicken in a casserole dish.Add onion, garlic to the pan the chicken was fried in and cook till soft.Add all other ingredients to the pan and bring to the boil.Pour over the chicken and cover with a lid.Simmer in 180C oven for about an hour.If you want a slightly thicker gravy, add 2 tsp Maizena, mix to a paste with water and add to the chicken dish.Serve with rice and veggies.VERY TASTY!
