Country Captain Chicken

A tasty warming dish, particularly suited to those grey rainy days!


  • Chicken breasts 1 tin tomato paste (small)
  • ¾ cup of flour 3-4 cups water
  • 2 tsp salt 1 tsp sugar
  • Pepper 1 tsp curry powder
  • 1 – 2 onions – chopped Mixed herbs
  • Garlic


  • Put seasoned flour into a plastic bag and toss chicken until coated well.
  • Brown chicken in Holsum or butter.
  • Place chicken in a casserole dish.
  • Add onion, garlic to the pan the chicken was fried in and cook till soft.
  • Add all other ingredients to the pan and bring to the boil.
  • Pour over the chicken and cover with a lid.
  • Simmer in 180C oven for about an hour.
  • If you want a slightly thicker gravy, add 2 tsp Maizena, mix to a paste with water and add to the chicken dish.
Serve with rice and veggies.
